Allergy Friendly Cookie Bars You’ll love!

Hiya! Y’all have been asking for more Gluten free and Dairy Free recipes. About a week ago I shared these cookie bars on my Instagram stories and about 50 of y’all asked how to make them! I get the idea off of Pinterest and will share the link to the post below!

Here’s a picture of how mine turned out! Honestly they were do delicious! We didn’t add the chocolate chips this time. I think I like it better that way! You can honestly do these for any occasion. Baby shower, bridal shower, birthday, graduation, girls night, work party, any holiday party or just to make and snack on!

First lets start off with what you will need! This recipe is made with ingredients that are usually found in your cabinet expect for the M&M’s

Allergy Friendly Tips:

  • Be sure to double check the oats you are buying! they need to SAY gluten free on them!
  • Also if you have someone with a peanut allergy substitute with Almond Butter
  • You can just used the Dairy free chocolate chips and add coconut, peanut butter chips, or fruit!

Moving on…..Heres how you make these delicious cookie bars!

Directions for making Cookie Bars:

  1. First Preheat oven to 350 & get your cookie sheet (12″ x 17″) ready. Spray it with cooking spray
  2. Next, In a large bowl, combine butter, brown sugar, granulated sugar (stevia), & peanut butter. You can use a mixer, or I just used a mixing spoon! If you do use a mixer use the paddle attachment! Mix until fluffy and pale in color (about 1-2 minutes). Might be longer if you are doing it yourself.
  3. Now, Mix in eggs & vanilla extract. Blend/mix together.
  4. Then add baking soda, quick oats, chocolate chips & m&m’s. ** leave some M&M’s for the top. Mix away!! HINT: it helps if you add the oats one cup at a time.
  5. Next, dump the cooke dough onto the cookie sheet! It will be very sticky. I used a spoon & sprayed it with cookie spray to help spread it out.
  6. Then, gently press the left over m&m’s into the cookie dough.
  7. Now, Cook for 17-18 minutes. The edges will be golden brown & pull away for sides of pan. The middle will still be undercooked!
  8. Lastly, LET THE BARS COOL. I know it smells heavenly but they need to cool down before you try to cut the cookie bars. Otherwise you will have a mess o your hands.
  9. ENJOY!

Y’all these are so easy and no one has to know that they are gluten free! I love making these for parties! Just be sure to make sure no one has a peanut allergy! Also if you are dairy free they have dairy free chocolate chips you could use instead!
